Tras años de maduración, los rizomas desarrollan las ironas, moléculas responsables de su olor icónico. No es un aroma floral; presenta un perfil suave, extremadamente persistente y complejo, con notas empolvadas, terrosas y amaderadas, además de matices distintivos de violeta y zanahoria cocida.
